First: Begin by coating your lamb chops in olive oil and then season both sides with salt and pepper to your own liking. After seasoning, apply sprinkles of worcestershire sauce to the lamb this helps with tendorizing the meat for the perfect cook.
Second: Using an cast iron pan on medium high heat , pour 1 tablespoon of olive oil in the pan being sure to spread it all around the pan.
Third: Once the pan has reached a sizzling heat place your seasoned lamb chops into the pan (be sure that during this step when the meat hits the pan it begins to sizzle). Allow to cook for 5 minutes each side.
Fourth: After 10 minutes passed, enter a half stick of butter into the pan along with 4-6 garlic cloves and fresh rosemary. This is the step that starts to bring together all the flavor for your lamb chops.
Fifth: Once the butter has melted down (do NOT panic as the butter browing is a good thing), you will begin to base your lamb chops by simply using a spoon to toss the lamb chops in the melted butter. This allows the flavor to really set into the meat and helps the meat remain juicy. You will do this for another 5-10 minutes, this is dependent on how you like your lamb cooked. I always go with Medium which permits for 8 minutes.
Sixth: Lastly, you will turn off the heat and then drizzle as much honey in as you would like, I drizzle about 1 tablespoon of honey to give it the perfect sweet & savory balance. After drizzling in the honey cover the lamb chops with aluminum foil to trap in the heat and allow to rest for 8 to 10 minutes.
